Our barramundi is raised in deep, open ocean water off Trincomalee, on the north-east coast of Sri Lanka — a coastline of clean tropical currents and constant tidal flow.
Open water, properly stocked, means the fish grow the way they should: firm, lean and clean — not crowded, not held in still inland ponds.

The single biggest thing that decides how a white fish tastes is the water it's raised in. Still, warm, inland water gives you that muddy, earthy "off" note. Open ocean water doesn't.
